Training offered by ISU Extension for food entrepreneurs

ISU Extension and Outreach acquired the curriculum from the University of Massachusetts, Shannon Coleman, associate professor in food science and human nutrition and a human sciences extension specialist at Iowa State, said in a news release.

Coleman’s research team has partnered with Kitchen Council in Council Bluffs to bring this curriculum to emerging and current food entrepreneurs in Iowa. This course is a two-day program designed specifically with lectures and interactive activities.

Participants will expand their knowledge of product development and labeling, as well as preventative controls and foodborne hazards of food products.

“We will introduce the food science basics, discuss important considerations when developing a new food product, share key elements required for product labeling, and provide an overview of key regulatory requirements for small and emerging food businesses, such as entrepreneurs and local food processors,” Coleman said.
